Big Hefeweizen or Imperial Wheat or..

..I don't know what to call it. This is a recipe I developed as a challenge from drinking buddies. They love the 312's and Allagash White's but now are turning to more unique and/or bigger beers. I am adding some organic orange blossom honey at flame-out to ad a hint of orange and bring the ABV past 8%. Keeping the temperature low at first to keep the alcohol as masked as possible. Also no orange zest and coriander, Hoping the yeast will bring the traditional wheat beer flavors. Recipe follows..

Mash at 155 for 90 minutes

7lb German Wheat
7lb American 2-Row
1/2lb Caramel 60
1/4lb Special B
2lb Orange Blossom Honey

.12 oz Perle 8.2 45min
.25 oz Sterling 8.7 5min
.25oz Perle 8.2 5min
